5 Minute Blender Salsa (Family Recipe!)
You will be eating this fresh salsa non-stop and feel great about it! This is a FAMILY recipe. It originates (for me) from my cousin’s recipe and my mom made a few modifications for it to keep longer — it doesn’t last long though! It is the perfect balance of tasty, zesty and with a little kick.
Ingredients:
Salsa:
14.5oz can of petite diced tomatoes, not drained
1/2 lime, juiced
1/2 bunch of cilantro, stems removed (about 1 1/2 c)
2 large jalapenos, seeded
1/4 of a large white onion
1 tsp garlic powder
1 tsp pepper
2 tsp salt
1, 28oz can of petite diced tomatoes, drained
Equipment:
Blender, sharp knife, cutting board, jars for storing.
Create.
Blend together the smaller can of tomatoes, lime juice, cilantro, jalapeno, onion, garlic powder, salt and pepper together in a food processor (or blender). Pulsing until an even puree.
Add drained larger can of tomatoes and pulse until desired salsa consistency. Pour into jars to store and allow to refrigerate at least one hour.
