Pork Egg Roll in a Bowl SOUP! - SUPER EASY

This soup is so tasty and satisfying. It really solves the desire for take out cuisine. The gingery, garlicky flavors combined with the warm comforting soup will help you stay on track with most diets and feel good. It’s also a great weeknight option, coming together in less than 40 min for 6 people.

Ingredients:

Soup:

  • 2 tsp sesame oil

  • 1lb ground pork

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tbsp coconut oil

  • 1 yellow onion, diced

  • 1 1/2 c of shredded carrots

  • 1 tsp ground ginger

  • 1 1/2 tsp garlic powder

  • 1 tbsp garlic, minced (about 3 average cloves)

  • 1 tbsp fresh ginger, grated

  • 4 green onions, sliced separating the white and green parts

  • 6 c of chicken bone broth or stock

  • 1/4 c of soy sauce

  • 1 tsp of ground fresh chili paste (use 2 if you like spicy)

  • 1 small green cabbage, cut and sliced into strips (about 4 cups)

  • 2 tbsp fresh cilantro, chopped (optional)

Garnish with fresh chopped cilantro

Equipment:

Sharp Knife, Cutting Board, Stock Pot (6+ qts), Wooden Spoon, Garlic Mincer, and Grater

Prep.

Prep and separate chopped veggies. Heat sesame oil in skillet or stockpot on medium high heat. Once hot, add the pork, season with half the salt and half the pepper and brown until completely cooked. Remove from pan and set aside.

Create.

In a large stockpot - heat coconut oil on medium high heat. Add onions second half of salt and pepper and cook until fragrant and becoming translucent (about 3-4 minutes.)

Add carrots, ground ginger, garlic powder, minced garlic, grated ginger and the white parts of the green onion and cook until carrots become slightly softened (about 2-3 minutes.)

Add bone both, coconut aminos and chili paste stir and combine well and bring to a boil. Reduce heat to low and simmer for about 10 minutes to allow the flavors to combine.

Add cabbage and continue to cook until the cabbage is just softened (about 4-5 minutes).

Finish.

Serve in your favorite soup bowl and garnish the soup with the green onion green parts or cilantro if you like!

Serves 4-6; we are a family of 3 and this serves us each for dinner and makes 2 complete lunches for leftovers.

Grain-Free Substitutions:

  • Use coconut aminos in place of soy sauce

Substitutions:

  • Fresh ginger - can be replaced with minced or 1 extra tsp of ground ginger

  • Onions - 4 shallots diced, 1 medium yellow onion diced, 1 vidalia onion diced

Additions:

  • Bean sprouts can be added with cabbage if desired

  • Rice noodles can be added, cook according to package instructions and add before serving

  • Ground pork can be replaced with turkey, chicken, or chopped fine raw shrimp - or even some combo of these.
