Chia Pudding - with DF, GF, Paleo options

Chia pudding is a bit overdone at this point, but I wanted to host the ratio that works for me - This ratio is pretty tried and true and there are plenty of ways to customize to your liking. Chia has a lot of benefits - it was a great way for me to mix up my typical overnight oats and/or greek yogurt routine. Let me know what you think.

Ingredients you’ll need for the base:

  • 1/2 c milk of choice (I used cashew milk)

  • 2 tsp of chia seeds

  • 1 T of syrup (or other sweetener of choice)

Some Flavoring ideas to keep things interesting - mix and match!

  • Pear spiced - add a 1/2 t of pumpkin pie spice and chopped pears to the jar and use cinnamon infused syrup.

  • Peanut butter and jelly - add a 1 T of peanut butter or peanut butter powder, and a 1 T of jelly instead and only 1 t syrup.

  • Basic Chocolate - add Tbs of cocoa powder

  • Basic Vanilla - add 1/2 tsp vanilla extract

  • Ripe banana - double the recipe - add a whole ripe banana and 1/2 t vanilla extract blend in a blender until smooth and dived amongst 2 jars.

  • Pumpkin Pie - add 2 T of pumpkin puree, and 1/2 t pumpkin pie spice

  • Key Lime Pie - double the recipe - add zest and juice of a lime as well as 1/2 tsp matcha powder (optional for color) blend in a blender until smooth and dived amongst 2 jars. - top with graham cereal or crushed graham crackers when ready to eat.

  • Strawberry Cheesecake - triple the recipe - add 1 Tbs of greek yogurt and 1/4 c chopped strawberries - blend in a blender until smooth and divide amongst 3 jars - top with graham cereal or crushed graham crackers when ready to eat.

  • Triple berry - 2x place milk and 1/4 c total mixture of raspberries, blueberries and blackberries (or berries of choice) in a blender and blend until smooth - strain and divide amongst two jars. Add 1x of remaining ingredients to each jar.

  • Tiramisu - add 2 tsp of cold brew coffee, 1/2 tsp vanilla extract, and 1 tsp of cocoa powder to each jar.

Kitchen “stuff” you’ll need: jars with air tight lids, preferably 8oz, measuring cups and spoons.

Create.

Place all ingredients in each jar (I used 6 oz yogurt jars). Add the lid and shake the jar well until everything is fully combined. Store in the fridge to set for at least 4 hours preferably overnight.

Finish.

Top with you favorite fresh fruits, granola or nuts and enjoy!

Substitutions:

-Any milk can be used

-Any sweetener can be used but a liquid sweetener works the best) (honey, maple syrup, infused syrup, simple syrup). Use artificial sweeteners for keto, and date paste for whole30.

Note: If chia seed texture is a concern try blending the mixture in a food processor or blender. It creates a different mouthfeel you might like better. Worth a try, it’s not too expensive to put together.

Store for up to one week in the fridge - great for meal prep. Hard fruits like apples and pears can be stored in the mixture, but softer fruits should be added prior to eating.
