[Gluten-Free, Dairy-Free] Apple Plum Pistachio Crumble

I love a good crumble or crisp - in this case I had too many plums and didn’t know what to do with them. This was born! I wanted the mixed texture of soft cooked plums and apples with a tart bite. I was actually out of hazelnuts, which is what I wanted to use so I tried pistachios and I love it! Let me know what you think! Gluten-Free, Dairy-Free - Apple Plum Pistachio Crumble with Cardamom

Ingredients you’ll need:

  • 4 red plums, pitted halved and sliced into 1/4” pieces

  • 1 large honey crisp apple, sliced in 1/8” slices

  • 3/4 c brown sugar, divided

  • 1/4 c arrowroot starch

  • 1 Tbs lemon zest

  • 3 Tbs lemon juice

  • 1/2 tsp cardamom, divided

  • 1/4 tsp cinnamon

  • 1/4 t salt

  • 3/4 c oats

  • 1/4 c lightly salted pistachios

  • 1/3 c ghee, chilled and cut into small pieces.

Kitchen “stuff” you’ll need:

Food processor, Large mixing bowl, pan: 8x8, 9x9 or deep pie dish, cutting board, knife

Prep.

Preheat the oven to 350.

Slice fruits, zest and juice lemon and place in a large mixing bowl. Measure out the brown sugar in a 1/2c and 1/4 c, separately.

Create.

In the large bowl combine fruit, zest, juice, 1/2 c brown sugar, corn starch, cinnamon, and a 1/4 t of the cardamom. Allow to sit for 10-15 min.

In a food processor combine the oats, pistachios, 1/4 t cardamom, and 1/4 c brown sugar. Pulse until an even consistency. Add the ghee pieces and continue to pulse until it is the consistency of wet sand.

In a deep dish pie dish add the fruit mixture and spread evenly. Add the crumble mixture on top in an even layer. Forming it in your hand, one handful at a time and breaking apart on top of the fruit until it is completely covered.

Bake for 40-50 minutes. Fruit should be bubbling and top should be golden brown.

Finish.

Serve warm with vanilla ice cream and caramel drizzle.
