[Gluten-Free] Personal Hasselback Dessert Peaches

Give these personal peaches a try for your next gathering. They are a quick and easy dessert that is sure to please. A fun play on the potato version for dessert! Both visually appealing and delicious. Dairy-free, gluten-free and portion control dessert (unless you eat them all!)

Ingredients you’ll need:

  • 4 peaches, halved vertically and pitted

  • 6 Tbs of ghee (or unsalted butter), divided

  • 1/4 c of brown sugar

  • 1 T of lemon juice

  • 2 tsp of ground cinnamon

  • 1/4 t ground nutmeg

  • 1/2 c of old-fashioned oats

  • pinch of salt

Kitchen “stuff” you’ll need:

large cookie sheet, parchment paper, sharp knife, cutting board, spoon, and medium microwave safe bowl, chopsticks or thick skewers.

Prep.

Preheat over to 375 and line a cookie sheet with parchment paper.

Place a chopstick on either side of your peach halves cut side down, and slice vertically from top to bottom in quarter inch slices. Do not cut all the way through. The chopsticks are intended to guide where to stop - but leave about a 1/4" at the bottom uncut in each slice. Place the peaches cut side down on the baking sheet.

Create.

Melt 2 of the Tbs of butter and brush the sliced peaches generously. It is okay if the butter solidifies on the peaches in a thin layer. Set aside any remaining butter.

In a medium microwave safe bowl, melt remaining butter and combine with remaining ingredients. Spoon in mixture between each peach slice. Use up all of the mixture between the 8 pieces. Brush again with any remaining butter, if applicable and bake in the over for 15 min. Oat mixture should look crisped and peaches should be tender.

Finish.

Top with dairy-free whipped topping, followed by a sprinkle of cinnamon and serve!
